History
Once a supplier of bulk grapes and wines to Maison Louis Latour, Jean Pierre Latour decided to step up its vine growing and winemaking techniques to make its own wines, and has now reach an exceptional quality across its range.
The history of domaine Latour-Giraud extends over three centuries and goes up at the end of XVII. The oldest known ancestor is Jean Latour-Boillot born around 1680. At that time the vine growing was already their main source of income.
One of the other activities run by the Latour Giraud family was a distillery near the Hospital of Meursault founded around 1845 and working until 1914, producing Fine de Bourgogne, Marc de Bourgogne, as well as the famous Cassis.
The current generation in charge is Jean-Pierre Latour who first started working in the cellar back in 1983, then took over the domaine in 1993. He believes it has been only 10 years since he achieved the result he was looking for in making his wines – which he defines as “richness, purity and elegance, so that wines finish fresh”.
With 2Ha in Meursault Genevrières, Latour-Giraud is the biggest land owner of this superb premier cru.
In a major commitment to improving quality, the estate adopted organic agricultural practices and reduced yields to 25-35 hectoliters per hectare.
Wine Making
The whites are whole-bunch pressed, receiving a first racking at the end of August, when Jean-Pierre looks at the quality of lees to take forward. Bâtonnage is often part of the equation, but close observation of the vintage dictates frequency and duration. The wines are matured in oak for 11 to 12 months, with about 20% new oak for Bourgogne and village, and 25% for the premiers crus.
The reds are all destemmed and go through cold maceration for 5 days. Elevage is in barrels (25% new) on the lees for one year. Racking is done just before hand bottling with no fining or filtering. As a group, Jean-Pierre's reds are very forward and appealing. They are juicy and expressive, saturated with loads of sweet, ripe, red and black fruits backed by lush, round tannins.
