Les Cents Vignes is a 23.5 ha Climat in the Beaune 1er Cru appellation. Les Cents Vignes originally comes from "Sanvignes" which would mean "village in the forest". Later on, the name evolved to "Les Cents Vignes", more adapted indeed because vines are plenty.
After a sorting in the vineyard and in the cellar, the grapes are destemmed then directly vatted. A pre-fermentation cold maceration is carried out during 5 days. The spontaneous fermentation then starts. The fermentation lasts 3 weeks in total. The wine is then aged in oak barrels (25% new barrels) for 15 months. Bottled without filtration or fining. Organic
